Thiruvadirai Kali recipe - This dessert recipe (dish) is special on thiruvathira, which is a Hindu festival celebrated in India during the holy month of Marg shish or Margazhi [ Margali ]. This special dish is made on thiruvathira day, so it is called thiruvadhira kali or thiruvadhira. Kali is made as an offering or prasad (special naivedhyam) to Lord Shiva or Nataraja.
This sweet tastes divine
Heat a pan. Add in split green gram or yellow moong dal
Roast until it turns brown
Keep the flame low while roasting.
When it is done keep it aside to cool after transferring it to a plate
Now heat the pan and add in the rice. Roast on a very lpw flame continuously until the rice turns reddish brown. It should not turn black, bit should just fall short of turning black.
Switch off the flame
Roasting like this is very important as it will give a nice aroma and flavour to the Kali
Now after it cools down take the rice and moong d in a mixer jar and grind to a powder which is slightly coarse, coarse like raha. In case you grind it too smooth your Kali will still be good. But it will have a halwa like consistency
Where as if you grind a slightly coarse powder your Kali will have a more defined texture which while being soft will have a slightly coarse feel
Now heat water in a pan. Let it come to a boil. Add on Jaggery or gud. Wait for it to completely dissolve. There is no need to make a syrup if any consistency. When the Jaggery dissolves, add in the grated coconut .
Add in ghee of 1 tbsp
Adding ghee at this stage is very important as it will help in dissolving lumps if any when we add in the flour or powder that we ground
Add in the powder and switch off the flame immediately. Then mix .
While mixing if you switch off the flame it mixes well.
Now after mixing well, switch on the flame and stir for 2 minutes
Then transfer it to a small pan or vessel which will fit into your pressure pan or cooker. Close the vessel with a lid
Close the pressure cooker and low 4 to 5 whistles
If you skip transferring to a vessel and directly add the Kali to a pressure pan , it may get burnt.
Now after 5 whistles have sounded and pressure is gone open the pressure pan.
The Kali is almost done.
Now heat a small skillet
Add in ghee. When it is hot add in broken cashew nuts
Roast until golden brown
Now add in these cashew nuts to the Kali
Our delicious Kali is ready to be served.
It has the awesome aroma of the roasted rice and dal, the tempering if the ghee . It tastes heavenly.
