Lemon rice is a very delicious yet simple and quick recipe. It can be a quick lunch box recipe too. There are some variations on how to make lemon rice. You can add cashew nuts instead of peanuts if you wish to.
If using raw rice add 2 cups water for 1 cup rice. We used raw rice
If using basmati rice to pressure cook the add 1.5 cups water for 1 cup rice.
If you cook basmati rice in a pot/ vessel then add 4 cups water for 1 cup rice. Check after 8-10 minutes. If it is done then drain it in a colander and then use.
Heat oil in a pan. Add peanuts when the oil is hot. Fry until they turn brown. Add the mustard seeds. When they splutter add chana dal. Keep flame low throughout. Now sdd in urad dal. Add in red chillies. Add asafoetida. Add green chillies. Stir until they turn golden brown. Add green chillies, curry leaves. Stir for a few seconds. Add salt and a little sugar. Sugar is optionalnal. Switch off flame. Add lemon juice.
Add in cooked rice and mix gently. Add rice little by little
Serve yummy lemon rice with papad or any Kootu or thokku / chutney l
