Jeera rice or flavoured cumin rice is mildly spiced aromatic rice. The main spice as you can see from the name is jeera or cumin seeds.
Jeera rice goes well with a wide variety of accompaniments. It can be had with any kind of dal and vegetable stir fry or curry along with salad or raita , papad and pickle.
Wash and soak the basmati rice in water for at least 30 minutes .
Heat ghee or clarified butter in a pan
Add cardamom or elaichi, 1 cinnamon stick or dalchini. Adding these is optional.
Add cumin seeds or jeera
Add in cbopped green chillies
Add chopped mint leaves and coriander leaves
Add water which is twice the quantity of rice. As we have taken 3 cups rice We have added 6 cups of water.
When the water comes to a boil add the rice. Mix well.
Bring the entire mixture to a boil. Then lower the flame and cover and cook for 7 minutes. Keep checking intermittently.
After 7 minutes remove the lid.
The rice is cooked but has retained its shape and the trained to not stick to each other. We do not want the rice to be mushy but it should be well cooked.
Even if it is 90 percent done and all water has evaporated switch off the flame . Cover it and let it be. The basmati rice will get cooked in the heat.

4 tbsp jeera or cumin seeds
1 cinnamon broken
4 green chillies
Mint leaves 2 tbsp
Coriander leaves 3 tbsp
6 cups water
