Red chilli and garlic chutney is an integral part of all chaat items like bhel puri, sev puri, dahi batata puri etc. But this garlic and red chilli chutney which is easy to make with few ingredients is very versatile and can be added to any curries or gravies or spicy flavoured rice or dals to enhance their taste and flavour.
1 cup Kashmiri red chillies
(a cup is 250ml in our recipes)
1/4 cup peeled and chopped garlic cloves
1 tbsp tamarind (if you do not wish to add tamarind you
Salt as per taste
sugar 1 tsp
Boil some water in a skillet
When the water comes to a boil, add in red chillies and tamarind.
Let it boil for 15 minutes.
After 15 minutes, switch off the flame and let it cool down.
After it cools down drain off the water, but do not throw away the drained water. Reserve it in case you need to add water for grinding.
Note that there is a lot of water inside the red chillies.
So initially grind without adding water, but along with all the other ingredients – salt, sugar, garlic and tamarind. If required, add the water that is reserved and grind again.
Our garlic red chilli chutney which is one of the important chutneys for chaat is ready.
You can add it to any curry or dal or spicy flavoured rice apart from using in chaats.
