चौलाई साग – Chaulai Saag Recipe | चौलाई साग जिसे बच्चे बड़े मांग माँगकर खायेंगे | Amaranth Leaves

CHAULAI SAAG RECIPE:

  • For this chaulai recipe, start off by washing the amaranth leaves very well and chopping them roughly.
  • Keep it aside.
  • Heat oil in a pan.
  • When the oil is hot, add in urad dal and saute for half a minute on low flame.
  • Then add coriander seeds, fenugreek seeds, peppercorns, cumin seeds, red chillies broken and tamarind. Stir in low flame until the urad dal turns golden in colour.  Take care not to burn the ingredients.
  • Add in shallots. Stir until shallots turn colour slightly.
  • Add in tomatoes after washing and chopping them roughly along with the green chilli.
  • Stir until tomatoes turn soft.
  • Add in 3 big flakes of garlic.
  • Stir until the raw smell of garlic is gone. This should take a minute.
  • Now add in the jaggery followed by the chopped Amaranth leaves.
  • Mix well and stir for a minute.
  • Then add 1.5 cups water.
  • Bring the entire mixture to one boil.
  • Switch off the flame after 1 boil.
  • Add salt as per taste.
  • Let the mixture cool completely.
  • Transfer to a mixer jar after it cools down.
  • Then grind this to a slightly coarse paste.
  • Now heat 2 tbsp oil in a pan.
  • When the oil is hot, add in mustard seeds.
  • When the mustard seeds crackle, add in the red chilli.
  • Now switch off the flame and add in turmeric powder and asafoetida (hing) powder.
  • Add in the curry leaves.
  • Add the ground Amaranth mixture.
  • Now switch on the flame.
  • On a medium flame, bring it to one boil.
  • Switch off the flame after 1 boil.
  • Now our yummy chaulai saag is ready! Serve it with rice or rotis or khichdi or have it as is like a soup.
