Besan bhindi is a delicious recipe from Rajasthan. Okra is cooked with spices and chickpeas flour. This can be made as stuffed okra or by sauteeing slices and okra . We have shown the second version. Traditionally okras were deep fried. We have not deep fried them. This is a change from the usual bhindi masala. Everyone will love it, be it kids or grown-ups.
Add 1/2 tsp salt, 1tsp sugar and lemon juice to the sliced ginger and keep aside for at least 30 minutes. We had marinated them for three hours.
Wash the okras well.
Drain and dry in a clean kitchen towel
After they are dried cut off both the ends and make a slit in each okra. Retain the shape of the okras without cutting them into two pieces even as you make a slit.
Heat oil in a pan
When the oil is hot add in the okras
Mix and stir for three minutes on medium heat
Lower the flame and cover and cook for about 7 minutes stirring intermittently until okras are cooked.
When the okras are being cooked heat ghee in another pan
When the ghee is hot add Besan.
Stir on low to medium heat continuously until a nice aroma wafts from the besan
Switch off the flame and add all the dry spices except garam masala.
Switch in the flame
Stir on a medium to low flame for three minutes
Then on a low flame cover and cook for 1 minute
After 1 minute remove the lid and stir for a minute
Cover and cook for a minute once more on a low flame
After 1 minute remove the lid and stir.
Add in garam masala.
Stir for a minute and switch off the flame
Serve yummy Besan bhindi with rice or rotis
Okra 250 grams
1 tbsp sliced ginger
3 tbsp sliced ginger
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp fennel seeds powder
1 tsp dry mango powder
1/4 tsp garam masala
3 tbsp oil
2 tbsp ghee
1 tbsp lemon juice
1 tsp sugar
