Aloo Palak gravy recipe is a very popular North Indian recipe. This aloo Palak recipe is very delicious and nutritious. Aloo Palak can be made as dry vegetable or as a gravy. We have shown the gravy version of aloo Palak recipe in this video.
Wash and roughly chop the spinach.
Add it to boiling water for 5 minutes.
Blanch by draining and dipping it In cold water
Grind to a coarse paste.
Wash peel and boil the potatoes until they are almost done
Chop the onions fine.
Chop the tomatoes.
Chop green chillies.
Heat a pan.
Transfer to a plate
Now heat oil or ghee in the pan
Add red chillies
Fry them until they slightly change colour
Take them out and transfer to a plate and set aside
After they cool , crush them in a mortar and pestle
Now add the whole garam masala and jeera to the oil / ghee in the pan.
Add finely chopped garlic when the cumin seeds crackle
Add chopped onions. Add a little salt after a minute
When the onions change colour add ginger garlic paste.
Saute for a minute.
Add tomatoes and all spices including the crushed spices but not aamchoor powder . Add a little salt.
Saute well and cover and cook.
When done add the potatoes. Mix well
Now add the spinach paste.
Mix well and stir intermittently. Cook on medium to low flame until the spinach oozes out some oil/ghee
Now add aamchoor powder.
After a minute switch off the flame

250 grams or about 2-3 medium sized
2 onions about 150 grams
400 grams or about 4 big Tomatoes
4 green chillies finely chopped
Ginger garlic paste 1 tbsp
To crush in mortar and pestle
Red chillies 4 to be fried and crushed
Jeera / cumin seeds roasted 2 tsp
A small piece of nutmeg roasted
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp dhaniya / coriander powder
2 tbsp kasoori methi / dry fenugreek leaves
1 tsp aamchoor powder
1/2 tsp garam masala
Ghee 3 tbsp
Cumin seeds 1 tsp
Cinnamon stick 1 inch
Black cardamom 1
4 big cloves garlic finely chopped
