dahi bhindi recipe | okra yogurt curry | दही भिंडी बनाने का आसान तरीका
Dahi Bhindi is a delicious North Indian curry. Okra is sauteed in oil to remove the inherent sliminess in it. Then spice powders are added and mixed with the okras and this roasted spiced okra is cooked in beaten curd. This okra curry tastes yummy when served with Indian bread like roti or naan and goes well with rice too. This recipe is easy to make, tasty and gets done under 30 minutes.
bhindi 400 g/ 4 cups chopped
1/4 cup Dahi/ thick curds
To roast and grind to paste
1 onion/ 125 g
4 garlic 2tsp chopped garlic
1/2 tsp saunf/ fennel seeds
oil 1/4 cup / 4 tbsp
1/2 tsp red chilli powder
1 tsp coriander powder 1/2 tsp cumin powder
1 tsp amchur / dry mango powder
besan 2 tbsp
2 tsp dry fenugreek leaves/ kasoori methi
1 /2 tsp. Mustard seeds
1 /2 tsp jeera
1 /2 tbsp green chilli chopped
1/2 tbsp chopped ginger
Heat oil in a pan
Add chopped onion, garlic, and fennel seeds
saute until onions slightly change colour
Transfer to a plate, cool and grind to paste
Now heat oil in a pan.
Add chopped okra
saute until it is cooked and slightly changes colour
REMOVE AND TRANSFER TO PLATE
Heat oil in a pan.
Add mustard seeds, jeera. When they crackle add ginger and green chillies.

Switch off flame and Add red chilli powder, coriander powder, cumin powder, kasoori methi, amchur powder, besan
Mix well,and stir using heat of the pan.
Now add beaten curd.
switch on the flame and stir continuously
After 2 minutes, add the roasted okra.
stir for 2 minutes and cover and cook for 3minutes.
